Bolognese is a rich meat sauce that originated from the city of Bologna in Italy. It’s typically made with ground beef or pork, onions, garlic, carrots, celery, and tomatoes. Red or white wine is typically added to deglaze the pan and enhance the flavors of the sauce. The sauce is often seasoned with a blend of herbs like oregano, thyme, and basil, and simmered for a long time to allow the flavors to meld together.Bolognese is most commonly served with pasta, such as rigatoni, spaghetti, or tagliatelle, and topped with freshly grated Parmesan cheese. It can also be used as a topping for pizza or as a filling for lasagna. The sauce is hearty and filling, making it a popular comfort food, particularly during colder months. Bison bolognese is a variation of the classic Italian sauce that replaces ground beef or pork with lean and flavorful bison meat. A combination of Bison Osso Buco and Bison Italian Sausage adds a richer and sweeter depth of flavor. Simple Bison Bone Broth is used instead of wine, which adds even more flavor.

Finally, the sauce is seasoned with a blend of herbs like oregano, thyme, and basil and simmered for a long time to allow the flavors to meld together. Bison meat is a healthier option than traditional beef or pork because it is lower in fat and calories and higher in protein and nutrients. Bison meat is also known for its rich and slightly sweet flavor, which pairs well with the other ingredients in the bolognese sauce. It’s a delicious and hearty dish perfect for a cozy night or special occasion.

Bison Osso Buco Bolognese: A Delicious and Nutritious Alternative to Traditional Meat Sauce.

This recipe is the result of a delicious experiment. The Osso Buce adds a deeper flavor and gives it a unique texture not often found in your typical Italian pasta sauces.

It should be noted that Bolognese is not a tomato sauce. It is a meat sauce that also has tomatoes.

Directions

In a large Dutch oven over medium heat, add the olive oil, onion, celery and carrot. Cook until soft and the onions are translucent.

Add the tomatoes and seasonings and mix with an immersion blender. Remove from Dutch oven and set aside.

Add the Bison Italian Sausage and a ¼ cup of the broth to the Dutch oven and lightly brown over medium heat.

Add the Bison Osso Buco and tomato paste. Cook for about 10 minutes, stirring frequently.

Add milk and cook 5 minutes stirring frequently.

Add Bison Bone Broth, tomato and vegetable mixture, and the bay leaves. Bring to a simmer, stirring frequently, then reduce to low heat. Cook 3-4 hours stirring occasionally to prevent burning.

The sauce will thicken and reduce over time. If needed add a ¼ cup of hot water or more bone broth.

Remove the bay leaves and serve over your favorite pasta.

Recipe Note

  • *It works well to make the Simple Bison Bone Broth with Osso Buco and the use the left over meat in this recipe.
  • A slow cooker works well to simmer the sauce.
